ZORBING in Pigeon Forge, TN

I thought I'd share a little something less fashion related on the blog today. I'd like to get better at incorporating fun things I do or trips I go on so you can get to know me a little bit better!

A couple weekends ago, my friend Kristen came to visit me in Pigeon Forge. It was her first time in the area since she was little, so it was fun to show her around and bring back some old memories. There are seriously SO many things you can do in Pigeon Forge - stuff I still haven't discovered yet. I've only been here for almost 2 (!!!) years now and I'm still finding new things.

She texted me a few days before her visit and asked if I had ever been to this Outdoor Gravity Park in Pigeon Forge. I can't tell you how many times I've driven by it in the last year and not noticed it (#oblivious). Before I looked into it, I'd never even heard of zorbing, but who wouldn't want to roll around in an enormous inflatable ball filled with water?!

Kristen found some groupons for us so we added this to the list of things to do while she was here. They give you a go pro when you're in the ball so you can video your experience. I learned I am the worlds worst videographer when I'm rolling down a hill in an inflatable ball and kept turning the camera on and off, so our video is split in 3 segments. #oops

Enjoy!

MY WHOLE30 EXPERIENCE PART 2: MY RESULTS & TAKEAWAYS

HEY! Thanks for coming back! I hope you enjoyed reading Part 1 of my Whole30 series. (If you haven't, scroll down and read Part 1 first!)

I promise not to make Part 2 as lengthy as Part 1 :)

Welcome to Part 2: My Results & Takeaways

It’s recommend that you don’t weigh yourself through the process so you don’t get caught up in the weight loss because it may not be as drastic as you're hoping for. It’s also recommend to take your measurements at the beginning of the 30 days and take them at the end to see your improvements.  I weighed myself the day before I started, but didn’t take any measurements. I’m not really one to care about inches, I tend to go by how my clothes fit and just liking what I see in the mirror. I do, however, get hung up on the number on the scale more often than I’d like to admit.

By not weighing myself throughout the process, it made it hard for me to really tell if what I was seeing in the mirror was real. Even after the first week I could see a little less “fluffiness” around my midsection, but nothing too crazy. By week 2, I could see a few more changes and decided to try on some clothes that had previously been too small (like not even close to zipping up…yikes). I COULD ZIP THEM ALL UP! Two weeks!!! So, at that point I knew I was losing weight and was feeling a little extra motivated to keep going. Some dresses were still pretty snug, so I excited to try those on after my last two weeks to see how they fit.

Some physical results I noticed throughout the process.

One week in: My midsection was less "fluffy."

Two weeks in: My stomach was ever shrinking and I noticed less cellulite on the back of my thighs and bum.

My remaining days: My double chin was gone (Praises!), my stomach wasn't bloated, and the back of my legs looked tighter.

How I felt:

My first two weeks I felt exhausted. I'd planned on exercising regularly throughout, but I was so surprised at how tired I felt that I just wanted to sleep. I guess I didn't realize how much added sugar and carbs I relied on for energy.

By the midpoint, I was pleased with being able to fit in to some clothes I hadn't been able to in a while, so I was pretty motivated to finish. Plus, I'd really gotten the hang of preparing food and knowing where I could and couldn't eat out.

Between the third and fourth week, I was definitely over it but not enough to quit. I was tired of all the cooking and having to be the deciding factor in where we could go out to eat when I would go with friends and family (I know, first world problems).

Energy wise, I was up from my first two weeks. I planned to work out more the remainder of the 30 days, but only managed to squeeze in a couple of sweat sessions.

I was really nervous to weigh myself at the end of my 30 days, but I promised myself I would be happy with whatever number popped up on that scale and reminded myself that my value doesn't come from a number.

When I weighed myself on my final day, I was down 9 lbs. (!!!) I didn't take measurements, so I have no idea how many inches I lost, but I know a few overall.

Takeaways:

The biggest takeaway I had from doing the Whole30 is learning what my body *needs* to be fueled properly.

I learned how much I actually need to be full and what that really feels like. I learned that healthy, whole foods can be delicious and not boring (just takes a little more effort!). I learned that I can in fact live without butter on a potato (shocking, I know). I also learned that I never want to live without cheese.

In all seriousness, I'm so glad I did this. Not only to shed some extra weight, but to learn about good food and how to teach others about it. I never want anyone to have a lifelong battle with food and if I can be apart of changing that for someone else, that's enough for me.

can't say that I won't ever think about how many calories is in a meal that I'm eating, but I can say that I know what my body needs and I refuse to feel guilty about giving it those things.

Would I recommend the Whole30? YES yes yes! No matter if you're trying to jump start your weight loss journey, trying to single out an unknown food allergy, or just wanting to reboot your body, go for it! It will totally change how you view the food you eat.

Thanks for reading! If you want to try Whole30 and have any questions, please don't hesitate to ask!

Stay sunny,

Katie

MY WHOLE30 EXPERIENCE PART 1: WHAT I ATE

Hi there! For the past 30 days I have been participating in the Whole30. If you're unfamiliar with what the Whole30 is, you can read all about it here. This is something I've always wanted to do (but really didn't think I could!) and I'm so excited to share my journey with you. In order for this to not get too lengthy of a post, I'm splitting it up into two parts.

Welcome to Part 1!

Here's how I got here: *Warning* I'm about to get real...

For the past few months, I haven’t been eating the healthiest. I’ve been eating out a ton and not exercising consistently. I am a true blue emotional eater, and it has been a very emotional year and a half. Fast forward to the inevitable weight gain. It wasn't a lot, but definitely enough for people to notice and not have a problem bringing it up to me (or my mom). Cue the tears and plummeting self esteem. (Although I’m sarcastic, it is a very touchy subject to me) I began exercising regularly and watching my calories, but wasn’t seeing the results I was hoping for (rather as quickly as I was hoping for). I was at my heaviest weight I'd ever been.

One night when I couldn’t sleep, I was lying in my bed thinking about what I was doing that was hindering any change in my body. I follow Whole30 on Twitter and saw a tweet by them and clicked through to the website. After reading what exactly what all went into it and realizing maybe my body was in a “food rut” and resetting it for a few weeks may be just what I needed. It's recommended not to start the Whole30 with the intention of losing weight, but that was exactly mine. Along side possibly shedding a few pounds, I was also interested is clearing up my seasonal allergies as spring was approaching and not feel so sluggish all the time.

Let's back up for a minute:

I've always struggled with food and body image. I've constantly gone up and down with my weight, never being satisified. In the past, I've gone from one extreme to the other. For months at a time I would try to see how many calories I could forgo without anyone really noticing in hopes that my stomach would be flatter than a piece of paper to months where I would stuff myself to the gills because I was stressed out or sad and food gave me comfort. I couldn't eat a single thing without thinking about how many calories were in it, or how much I would need to exercise the next day to cancel it out. Sometimes, I still can't. My hope with the Whole30 was that by fueling my body with the correct nutrients, it would respond accordingly and maybe I could sever my unhealthy relationship with food. The truth is, I love food and I love exercising. I love being good to my body. I love having an able body to do the things I want to do. The trick is finding the right balance.

I decided to start this the very next day. (Mind you, it was already around 2am that morning...)

During my 30 days, I journaled what I ate daily and how I felt after each day. Since it would be too lengthy to include each day, I'll share my first day and how I overcame it because it was quite the doozy!

Day 1: Monday

Because I started this on the fly (I don’t recommend), I wasn’t prepared for my first day, but I prevailed nonetheless.

Breakfast: I started my day off with 2 hard boiled eggs and a green smoothie. Before I started the Whole30, I was already eating this for breakfast, so luckily I didn’t have to change it up too much on my first day.

Lunch: This was a disaster waiting to happen because I wasn’t prepared at all. I underestimated how easy it would be to find a Whole30 approved lunch quickly and conveniently. My office is very close to our local Publix, so I thought that would be a good place to start. I considered tuna, avocado and tomatoes mixed together, but then realized the tuna I prefer contains soy, a Whole30 no-no, and any other meat options that I could get instantly were pretty limited. So, after scrambling around for most of my lunch hour, I picked up some avocados, grape tomatoes, bananas and apples and snacked on those throughout the afternoon.

Dinner: Because of my light lunch, I was SO hungry by dinner time. I cooked a burger in the pan with ghee, topped it with a fried egg, some Whole30 approved mayo, an avocado, and tomato. Not too bad!

How I felt: After my lunch fiasco, I was definitely feeling the hanger (so real, folks) when I got off work and was wondering if I could actually do this. I stopped by Starbucks and got a venti black iced tea (unsweetened) and made my way to the grocery store. My head was pounding but I still went to the gym and tried to finish out the evening as I normally would.

What I bought on my first day grocery shopping:

boneless skinless chicken breasts
ground beef
grape tomatoes
avocados
lettuce wraps
apples
bananas
almond butter
ghee (clarified butter)
strawberries
spinach
eggs
sweet potatoes
Primal Kitchen avocado oil mayo

Now that I actually had things to prepare food with, it was all uphill from there!

I quickly realized that I didn’t have very many options and in order to not burn out after a week of eating the same meal, I was going to have to get creative.

Here's a summary of my meals.

Breakfast: The first two weeks I was really good about preparing food the night before. I would roast cinnamon sweet potatoes and boil eggs at night and in the morning I would eat the potatoes, cut up an avocado, and eat those with my eggs and a side of fruit (pictured below). I did some version of this everyday for the first two weeks. I was definitely getting lazier my last two weeks so I would just boil some eggs at night and grab those in the morning with some fruit or nuts. I also noticed not being as hungry and feeling like I needed such a big breakfast the further I got.

Picture overload ahead.

For some reason I ended up taking more breakfast pictures than any other meal.

Lunch: For lunch I basically ate a different protein with a side of veggies and/or potatoes. If I went out for dinner, I would get some grilled chicken or steak and save half of it for the next day to decrease prep time. One day I made a Whole30 approved chili that I ate on for 3 days that I loved. I also made a couple of roasts in the crockpot that got me by for a few days as well and I would just pair that with a potato and veggies. If I didn't feel like cooking anything or didn’t already have something prepared, I would just grab some boiled eggs and snack on halos, nuts and tomatoes (not altogether ;) ).

Dinner: I was most worried about dinner because my boyfriend and I eat out a considerable amount. I know, why couldn’t I just cook for the 30 days and avoid it altogether? Cooking got old SO fast and it’s not something I particularly love anyways. Thankfully, my boyfriend was gracious enough to really consider where I could and couldn’t eat which made things so much easier. We would only go places where I knew I could get some sort of grilled protein, veggies and sometimes a potato. It actually ended up benefiting the both of us because we started ordering meals we could share (like steak & shrimp w/ an extra side) and that way we both got to cut down on calories and be more cost effective. We are both bad about ordering too much food and never being able to eat it and not take to-go boxes. Win win!

Crock pot meals are seriously the way to go. I discovered this a little over half way through and it's really what got me to the end. I'm a bit of a repetitive eater, so I don't mind eating on the same meat for a few days in a row. I mainly stuck to chicken and roast in the crockpot, but if you need variety, I would 100% recommend finding all sorts of crockpot meals and by some crockpot liners and you'll be golden.

How I did my chicken and roast. Both turned out SO tender and delicious.

Crock pot salsa: 2 boneless skinless chicken breasts, one can of homemade or Whole30 approved salsa

Roast in the crockpot: 1lb roast with water or beef broth and salt/pepper to taste.

I hope you enjoyed Part 1! Come back for Part 2: My Results & Takeaways tomorrow!

Katie

SPRING INSPIRATION

Even though the first day of spring was Monday, I've been hesitant to start shifting my wardrobe over because I just know there'll be another cold snap before the weather officially starts warming up. In the mean time, I'm dreaming of florals, pastels, and everything light and airy.

Here are a few outfits that are totally getting me in the spring spirit!

Are you in the mood for spring yet?! I hope some of these looks have inspired you like they have me!

Stay sunny,

Katie

SPRING BAGS

Two things I've been very into for spring and summer...statement earrings and bags. I typically where the same pair of pearl earrings and that one purse that goes with everything, but lately I've been trying to step out of my comfort zone. Last year I felt like straw bags really made their debut and it looks like they're back again! Just like statement earrings, a great bag can really take an outfit to the next level. I love coordinating my bags to my outfits and really pulling everything together.

Here are a few favorites (from left to right, top to bottom)

Monogrammed Leather Handle French Basket - comes is lots of different color options!

Which is your favorite spring bag?

FRIDAY FINDS

Happy Friday! This week has crawled by to me. I've felt very off this week and my allergies are in full force at the moment, so I for one am so happy the weekend is ahead! It was a beautiful 70 degree day yesterday and tomorrow there is snow in the forecast...crazy!

Here's some fun finds of the week.

Lilly Pulitzer Spring Break Sunseekers // How cute is this maxi dress? Lilly Pulitzer just launched their Spring Break line and I love it! I wish I had a tropical vacation to go on so I could have an excuse to buy this dress. A few of my favorites - this romper, this cover up, these shorts and OTS top,   and this popover. Some new arrivals I'm dying to snag - this dress (the bows!), these leggings, this top, and this dress. Ok, enough for now!

12 year old slays "Chandelier" // Y'all, this little girl, Elha Nymph, is amazing! I actually don't like the original of this song, but I've heard two covers that I love and she has just moved to the top of that list!

University of Tennessee: The Hunter Thomas Feature // Grab the tissues! I have had the privilege of meeting Hunter and seeing first hand what an inspiration he is. This feature is no exception. I'm so glad to see a program like this provide opportunities for people like Hunter.

J. Crew leather mules // I need these in my closet asap.

Also loving J. Crew's swimsuits this season // Especially loving this floral print, this seersucker, this gingham, and these striped suits - here and here.

New Jack Rogers style // Have y'all seen this new style of Jacks?? I'm obsessed!!!

Cutest Straw Bags from TCP // My love for straw bags runs deep. They lighten up any outfit for summer.

Love this look on Mackenzie from Design Darling // Off the shoulder tops are really starting to grow on me!

Stay sunny,

Katie

FRIDAY FINDS

I thought I'd share some of my favorite posts I came across this week that have inspired me! It's no secret that I'm beyond ready for (official) spring weather and these posts have just heightened that feeling.

Krista from Covering the Bases // *NEED* this dress and I'm just obsessed with everything about this post from Dublin.

Carly from The College Prepster // Preppy #goals in this post from Charleston and Kate Spade does it again with this matching set.

Sarah Vickers from Classy Girls Wear Pearls // This Kate Spade set styled differently than Carly but equally as perfect.

Rachel from Something Delightful // Loving all of these picks from the Shopbop sale and this look.

Dorothy from Prep in Your Step // Wanting everything on this Spring Break Shopping List (and wishing I still got a spring break #adulting)

Mackenzie from Design Darling // Need these sailor jeans like yesterday and this packing list for Naples has got me wanting to make a trip myself.

Kate from Lonestar Southern // I could never pull this top off but Kate does it so effortlessly.

Jess from The Golden Girl // Love love love. Trust me, it's good.

Kelly from Kelly in the City // This post is written by Kelly's husband, Mitch and it's hilarious. Just read it.

Julia from Gal Meets Glam // ALL of her posts recently have me dreaming of spring and summer. So many florals, shades of pink, and feminine pieces. I can't get enough.

Sydney from Summer Wind // Embracing white at the middle (end?) of winter.

And to leave you with a quote I came across yesterday that resonated with me this week...

OSCARS 2017: FAVORITE LOOKS

One of my favorite things about award shows is the red carpet. Although award shows aren't all about fashion, it gives stars an opportunity to showcase their own sense of style while shining a light on designers.

Here's some of my favorite looks from the Oscars.

Emma Stone in Givenchy Haute Couture

Viola Davis in Armani

Karlie Kloss in Stella McCartney

Octavia Spencer in Marchesa

Chrissy Teigen in Zuhair Murad Couture

Taraji Henson in Alberta Ferretti - so glamorous!

Hailee Steinfeld in Ralph & Russo

love the back!

Charissa Thompson

What's your favorite look?

FRIDAY FINDS

Did this week fly by or is it just me? Regardless, hurray for the weekend! You may have noticed a wee little change in the name of these posts. I'm changing these Friday posts from "Friday Favorites" to "Friday Finds." I just think it makes more sense with the content.

Any who...here are my finds from the week!

The perfect summer crossbody // The leather and wicker combo has me dreaming of summertime over here. It would go perfectly with this adorable shirtdress

SodaStream // I've been on a MAJOR carbonation kick lately. I recently tried Bai Bubbles (my favorite flavor is blood orange) and I'm obsessed. Even though the SodaStream would just be carbonated water (with no flavor), I think I would still love it because of the bubbles.

The Perfect Tweed Dress styled by Krista // Have you ever seen a tweed dress so perfect? hint: the answer is no ;)

Batiste Dry Shampoo // Y'ALL. I don't know why it has taken me all of my 25 years to try dry shampoo, but it has changed my life. I've only tried two brands, and this one is my favorite as of now.

Too Faced Melted Matte Liquified Long Wear Lipstick (in Queen B) // My new favorite lipstick (gloss?) I've been searching for the perfect (semi) neutral matte lip for so long now and I've finally found it! I was a little hesitant at first because it's got the teeniest bit of purple color to it, but it really looks great on and makes me feel trendy (lol) yet put together.

Estee Lauder Double Wear Stay-in-place Foundation // Another new favorite. I have used bare minerals makeup since high school and recently decided to try out something new. A girl from Ulta suggested this and matched my color (my shade is Desert Beige). She gave me a sample to try for the week and I love it! It's a little pricey, but you definitely get what you pay for in this case.

22 Times Meghan Markle Nailed Preppy Style // I imagine that Prince Harry's girlfriend and Princess Kate would get along just fine. :)

Happy Friday, folks!

Stay sunny,

Katie

WARDROBE STAPLES FOR ALL SEASONS

The older I get, the more I find myself gravitating towards pieces I can wear multiple times and mix and match. I am a true believer in quality over quantity, so I usually don't mind spending a little more on an item that I know I'll get multiple wears out of and will be in style season after season.

I love all these pieces because they can worn alone, paired, through each season. They can also be worn in a professional setting as well as everyday looks. Of course, most of these pieces are pretty neutral, but if color is more your style, then go for it! This is simply meant to be used as a guide and good base for your closet.

The good thing about these staples is they're typically sold all the time, so you won't have to worry about purchasing something, accidentally ruining it and not being able to find it again. There are tons of places you can find staples that are budget friendly. Some of my favorites are J. Crew Factory, Loft, Gap, Old Navy, ASOS, Nordstrom...really, so many! And always keep an eye out for sales and discount codes to get the best bang for your buck!

Stay sunny,

Katie
